Andalusian Gazpacho by obelix
This classic recipe of our Mediterranean diet is a basic and essential part of our diet. It is a delicious cold soup, very refreshing and ideal for summer. In addition, it is made only with vegetable ingredients, i.e. it is vegan.
- 1kg of ripe Obelix oval tomatoes
- 1 clove of garlic
- 1 green pepper
- 1 cucumber
- 1/4 onion (optional)
- 150 grams of bread
- Sherry vinegar
- 100 ml olive oil
- Salt
- Wash, peel and cut all the vegetables. We recommend cutting the cucumber into slices.
- Wash the Obelix tomatoes and cut them into quarters.
- Peel the garlic clove. Remove the core and chop it. Repeat the process with the onion.
- Use a container to store the peeled and chopped cucumber, Obelix tomatoes, garlic and onion.
- Cut the bread into pieces, soak it in water for a few minutes until it is no longer hard and add it to the bowl with the vegetables.
- Add 100 ml of oil and a splash of vinegar and a pinch of salt.
- Blend all the ingredients in a blender until the mixture is liquid.
- You can pass the blended mixture through a sieve if necessary (optional).
- Add a little cold water to the mixture and keep the gazpacho in the fridge for about 1 hour.

Stuffed Obelix tomatoes
Here is this vegetarian recipe for stuffed tomatoes, perfect for the Obelix tomato, given its size and consistency.
- 6 Obelix oval tomatoes
- 2 courgettes.
- 2 carrots.
- 2 medium potatoes.
- 1 mozzarella cheese.
- Oregano.
- 1 clove of garlic.
- 2 tablespoons of extra virgin olive oil.
- salt.
- ground black pepper
- Cut a cap off each tomato at three quarters of its height and scoop out the flesh with a teaspoon. You can also cut the Obelix tomatoes in half lengthwise, removing the seeds.
- Cut the courgettes, carrots and potatoes into small cubes.
- Fry them all in a frying pan with the oil and garlic for 5 minutes, stirring from time to time. Leave to cool.
- Cut the mozzarella into cubes. Add the oregano and add it to the vegetables, seasoning with salt and pepper.
